The menus that are served in our catering service and the cakes, sweets and snacks that are served in our pastry shops - coffee shops, are made with first quality raw materials. In relation to gastronomy we take care of every detail to the maximum to offer the best products to the client.
In Lepanto we make sure that the food served in the pastry shops – coffee shops and in the catering service offer the highest possible quality. For this, we monitor that the following requirements are met:
• Suppliers must have a registration number as distributor or producer.
• Suppliers must have an approved and approved vehicle.
• Providers must keep their vehicle clean and disinfected.
• The personnel who transport the products must be accredited.
• To conserve the most perishable foods that are easily damaged, disinfectable and washable materials should be used.
• To keep food cold or frozen at the same temperature it is necessary to have thermal cabinets with a cooling engine.
• Frozen foods should be at a refrigeration temperature of -18ºC and perishable foods at 4ºC.
• Non-perishable foods do not require low temperatures, but at most they can be at a temperature of 20ºC.
• To preserve the properties of the raw material, the storage place should be clean, disinfected, well lit, with stainless steel shelves separated from the wall and soil and free of pests.
• Foods must be labeled with your name and the expiration date.
• The raw material must be checked every day to throw away old or spoiled food.
• Cooked foods should not be stored on top of the raw foods to avoid cross contamination.
